Inspired by the unique flora of the Mornington Peninsula

Old Man Sun is the project of Tom McCarthy and Sarah Saxton, a wine label grounded in traditional winemaking and respect for the land.

Launching with a small range of considered wines that reflect the Peninsula’s distinctive ecological sub-regions.

Our Approach

Our winemaking techniques focus on elevating the unique expression of the vineyard and the season. In respect of the fruit traditional winemaking techniques are used including exclusively wild yeast, malolactic fermentation, minimal movements, the use of seasoned oak, as well as bottling without fining or filtration. Small amounts of Sulphur are used to ensure stability, and quality is always paramount. Little added, nothing taken away.

Our home vineyard is a true heritage site, established by Geoff & Sue Duke from 1989 with a strong focus on sustainability and biodiversity. We are proud to continue this stewardship today by farming our vineyards organically, prioritising biodiversity and ecosystem health at all times.

Beyond our home vineyard other wines in the range come from fruit grown using regenerative, dry grown, and where possible, organic viticulture.

Lightweight glass, local distribution

The single greatest carbon input in wine is glass. We’ve adopted lightweight glass and a focus on local distribution to minimise our impact.

Building biodiversity

In an effort to maximise biodiversity no systemics are used in the vineyard and locally indigenous plants grow at the end rows.
